Mini Coffee Pudding Cups

I have to admit, this might not sound like the most glamorous dessert, but if you love coffee and pudding you are sure to love this one. It whips up so quickly and can be a great lower calorie alternative to ice cream (it doesn’t taste low calorie, I promise). You just need a few ingredients, about five minutes of prep, and ten more minutes of patience and this dessert is ready!

This dessert is extremely budget friendly to make and will make enough servings for four. If you would like to make a larger batch, I recommend doubling or tripling the recipe.

Ingredients:

1 packet of Jello instant pudding (vanilla, zero sugar vanilla, cheesecake, white chocolate, or chocolate - up to you!)

2 cups of whole milk

1 instant coffee packet

1 tub of cool whip

Toppings of your choice (shaved chocolate, graham crackers, etc.)

Disposable shot glasses or miniature parfait cups

Directions:

In a large mixing bowl, pour 2 cups of cold whole milk. Mix in one packet of instant coffee until coffee has dissolved. Once coffee has dissolved, mix in the jello pudding packet of your choice. Mix until pudding has set and chill in the fridge.

While pudding is in the fridge, set out your disposable shot glasses or miniature parfait cups and layer the bottom of each with cool whip.

Take pudding out of the fridge and add a layer of pudding on top of the cool whip. Repeat layers until you have filled up the shot glasses or parfait cups.

Top with shaved chocolate, graham crackers, fruit, or eat by itself. Enjoy!
