Bacon Wrapped Jalapeno Boudin Poppers

Being from Louisiana, I love anything and everything boudin. That’s why this is one of my favorite appetizers to make in a pinch. And let’s be real… sometimes I make this for our dinner entree too. It’s cheap, comes together in a matter of minutes, and is full of flavor and spice. This is always one of my go to recipes when bacon is on sale, so keep your eye out!

If you don’t know what boudin is, it is a rice and pork mixture, seasoned with cajun spices and seasonings. Don’t worry if you have never heard of boudin or don’t know how to get your hands on it. I will walk you through an alternative option for this rice mixture!

Ingredients

8 jalapeños, halved and deseeded

1 package of bacon

1 boudin link

OR

1 cup uncooked white rice

2 cups chicken stock

1 tbsp butter

Garlic

Cajun seasoning

Directions

If you do not have access to boudin in your local grocery store, you can make your own version for this recipe. Begin by cooking 1 cup of white rice in 2 cups of chicken stock. Season while cooking with 1 tbsp of butter and garlic.

While rice is cooking, wash, halve, and deseed jalapeños to your liking. Want them spicier? Leave more seeds. Want them more mild? Remove all seeds.

If you already have boudin premade, you can begin scooping one to two spoonfuls into the deseeded jalapeño halves. Feel free to fill the jalapeños with however much boudin you have or would like to use.

If you are making your own rice mixture, once your rice has finished, season with a cajun seasoning (I highly recommend Tony Chachere’s Creole Seasoning - I use it on everything), garlic powder, onion powder, and if you like to add a little bit more heat, white pepper. Follow the same directions as above and scoop one to two spoonfuls into the deseeded jalapeño halves.

Once the jalapeño halves are filled to your liking, wrap each half in one strip of bacon.

There are numerous ways that you can cook these bacon wrapped jalapeños. Really, you can go no wrong with any way you choose. Just make sure the bacon is crispy to your liking!

Oven: 350 degrees for 20-25 minutes

Air Fryer: 390 degrees for 12-13 minutes, flipping halfway

Grill: Medium heat 10-12 minutes, flipping as needed
